TECHNICAL INFORMATION
Grape Variety: 100% Tempranillo (Tinta del País).
Vineyards: Sandy soils (our vineyards from San Juan del Monte, with more than 60 years old) from Ribera del Duero.
Maceration: cold maceration for 7 days at 8ºC.
Alcoholic Fermentation: for 5 days at 28ºC with autochthonous yeasts.
Malolactic Fermentation: In brand American Oak.
Ageing: 9 months in brand American and French oak barrels. Barrels of 400 and 500 litres with medium toasted.
Analysis:
Alcohol content: 15% Vol.
Acidity: 4,77 g/l.
Sugar content: < 2 g/l.
pH: 3,75.
Filtration: Light.
